Elk Ridge Resort is looking for a dynamic and creative Executive Chef to lead and oversee Culinary Operations for all of our outlets: Fredrich, The Wyld, and Banquet Operations. The Executive Chef assists with the achievement of Elk Ridge’s vision and goals by monitoring the daily performance of the culinary team. The successful candidate will be a visionary who will embody and promote a culture where all team members are given the opportunity to provide Elk Ridge guests with the very best culinary experiences.
Reporting to the Director of Operations, the Executive Chef is responsible for all day-to-day operations of the kitchen and culinary team.
RESPONSIBILITIES:
Design and create regular menus as well as special menus (ie. Groups and events) in compliance with trends, margins, and Elk Ridge Resort standards.
Coordinate, supervise, and assist in the preparation, cooking, and controlling of all meal periods.
Review and complete budgets and forecasts and ensure product costs, labour expenses, departmental expenses, and revenue lines are all achieved.
Monitor food cost of all menu items to meet the food cost target.
Provide strong and fair leadership, use problem-solving decisiveness, and ensure that the Elk Ridge brand standards are consistently adhered to.
Lead by example - manage, monitor and develop team member performance (ie. providing supervision, scheduling, coaching, evaluations, and delivering recognition).
Maintain a professional image at all times.
Project an enthusiastic, optimistic, and helpful attitude.
SKILLS AND EXPERIENCE:
Minimum of 3 years related experience in an equivalent Kitchen management position.
Red Seal certification mandatory.
Must have a demonstrated passion for food in addition to culinary vision and excellent knowledge of restaurant trends.
Must be hands-on with the ability to inspire and encourage a happy, productive, and cohesive work environment.
Must have excellent interpersonal, communication and leadership skills.
Must be energetic, enthusiastic, and self-motivated.
Ability to collaborate with other Departments and outside vendors.
Excellent organizational, follow-through, and workload planning skills.
